Time to re-purpose the old blog...

I think I need this space back. It was great for being my deal dumping grounds while I was growing my couponing skills but now that I've got that down I'll leave it to the pros :)

Instead, I've decided to make this blog a little more personal. If you don't like it, feel free to unsubscribe or quit following. I'll probably still post my shopping trips and deals from time to time because I don't intend to become less cheap at any time in the future. I just don't want that to be my focus anymore.

In case you're wondering, current focuses and goals for myself include:
  • More crafting- both with and without kiddos. I grew up in a crafty household, and while I'm quick to admit that I'm not artistic by any means I can still pull out a good craft once in a while.
  • "Re-fashioning" myself. I have had 3 adorable kiddos in the last 4 years but that's done a number on my body and my wardrobe. One of my personal goals this year is a new style on the cheap. I'm going for modest, late 20's, "I'm a mom and it must be practical but I still want to look cute" and CHEAP.
  • Get in shape. Sure, I'd love to lose weight but making that a goal is a surefire way to disappoint myself. Instead I'm going to focus on getting outside more, exercising more, and eating better. I guess that means the real goal overall is a healthier me.
  • Continue to hone my shopping skills. I've been at the couponing thing now for 3 years and while I'm good at it, I want to focus more on cutting my OOP and stockpiling the right amounts. I think having a specific goal here will help me continue to improve. I'm currently on a "shopping break" which means nothing but dairy, bread, and produce (and the occasional needed item).
  • Sweeping. Not sweeping the floor sweeping, but entering sweepstakes and playing instant wins. I've been fooling around with this for a while and had small wins. In November I won my first major prize (a trip we'll be going on next month, I'll share more details when we get back). December was good to me as well. Of course, I'll be sharing some of those kinds of things here as well.

Menu Plan Monday (and what we did this weekend!)

We had one busy weekend, here's what we've been up to:


Enjoying some of the awesome produce on sale this week (we made scones)


We took the plastic off our garden after our broccoli started blooming faster than we could eat it. We have a second garden bed, but this one really took off (the tomatoes are as tall as my 3 year old!)

We snacked on the broccoli as well because it tastes better right off the plant.

And we started a new project, I'll share more once we're done!

I did quite a bit of shopping last week for groceries, so we're using a lot of things we already have on hand this week. I'm practically out of cheese, so I'm excited to see Tillamook will be on sale at Safeway starting Wednesday (I plan to stock up).

  • Monday: Tostadas
  • Tuesday: Teriyaki Chicken with Rice and Broccoli (from the garden!)
  • Wednesday: Crockpot Chili
  • Thursday: Breakfast (it's silly and a great excuse to use up those sausages I found marked down last week)
  • Saturday: Steaks, Hashbrown casserole, veggies

Menu Plan Monday

gak! I can't believe it's Monday already, can you? We've got a busy week this week- with a birthday on Wednesday and a party this weekend. I did get out and do some shopping for produce (plus, we've got broccoli that needs to be picked...or cut...or whatever it is you do to broccoli in addition to all the lettuce). Still, I need to attempt a menu plan and it's going to look something like this:

Monday: taco night
Tuesday: I've got peppers that need to be cooked, and onion, so I'm leaning towards chicken fajitas
Wednesday: Crockpot Broccoli Beef and rice (but maybe I'll let the birthday boy pick something) followed by "chocolate cake with yellow frosting"
Thursday: Stuffed cheesy spinach manicotti (with beef) and a garden salad
Friday: Black beans and brown rice (we ended up going out last week so I'll be making it this week)
Saturday: Birthday party!

We're back!

We had a very muddy but successful camping trip with the kiddos this weekend. We actually got in yesterday and took advantage of the FREE Papa John's pizza for dinner (there's nothing like a completely free pizza). I'm back to menu planning as of today, here's what I'm working on for this week:

  • Monday: Hamburger with pork n beans, salad (w/lettuce from the garden!)
  • Tuesday: Not sure yet, both boys have a doctor's appointment so I'm waiting to see how they do with that.
  • Wednesday: Whole chicken with roasted veggies
  • Thursday: Stir Fry w/leftover chicken, broccoli, and carrots on rice
  • Friday: Black Beans and Brown Rice
  • Saturday: Another not sure here, we'll be getting a couple of dogs for the week so my "maybe plans" of trying a new dish with the shrimp I picked up a bit ago might not go through...

I'm working on my grocery list at the moment as well, we're out of milk so I may need to make a quick trip to Safeway. I'm also hoping to swing by Albertsons tomorrow for some FREE Land o' Lakes spreadable butter (or else rainchecks on that- Thanks Queen Bee!). Fred Meyer would also be nice what with their cheap grapes, yogurt, and bagels (check The Coupon Project for a great matchup!).

Menu Plan Monday

It's been forever since I posted one of these, partly because I've been winging it (and that's not especially thrifty) but mostly because I keep forgetting to sit down and make one. So, here it is:

Monday: "Teriyaki Ginger Sesame" Pork Tenderloin with a garden salad (both purchased on markdown at FM yesterday- the salad has everything in it, including cherry tomatoes!)
Tuesday: Pulled Pork (crockpot) with green beans
Wednesday: Tacos with homemade refried beans and rice
Thursday: Chicken and Broccoli Stir Fry
Friday: Breakfast for dinner
Saturday: BBQ Chicken with Mashed Potatoes and Corn on the Cobb

Menu Review (Tuesday?)

We had another good week eating out of the pantry this past week! Here is what we actually ate (I drew up the month long menu plan, but we deviate once in a while):

1/11: For breakfast we had cereal and bananas, lunch was Black Beans and Rice. Dinner was Chicken Breasts with stuffing, corn, and peas.

1/12: Breakfast was eggs and toast, lunch was mini-farfalle with broccoli, butter, and Parmesan cheese. Dinner was Chicken Enchilada Casserole (made with cooked turkey) with rice. We also made a batch of brownies.

1/13: Breakfast was cereal, Lunch was leftover Black Beans and Rice. I made pork chops, with mashed potatoes and corn.

1/14: We did eggs for breakfast (at the toddler's request), lunch was sandwiches and veggies for dipping. We had another toddler and her mommy over to make Cinnamon Raisin Bread (recipe from Martha Stewart- needs improving on) in the afternoon and I forgot all about meatballs. So, I went into default mode and made tostadas (the reason for my "spendy" can o'beans last week).

1/15: None of us were feeling great, so breakfast was cereal & Cinnamon Raisin Bread, lunch was soup from a can, and the husband picked up pizza for dinner.

1/16: Cereal and Cinnamon Raisin Bread for breakfast, hamburgers for lunch. We ate a yummy dinner at my MIL's house.

1/17: Breakfast was oatmeal, lunch was tuna sandwiches with chips (for grownups) and carrots (for toddler). We ate dinner over at a friends house (Thanksgiving style!).

1/18: We had a late breakfast of French Toast and eggs. We had a very early dinner of Meatloaf with hashbrown casserole and brussels sprouts. Then we ate Mini Delights with strawberries and a small scoop of ice cream for dessert.

Black Beans and (not)Brown Rice

I briefly mentioned in my menu review for the week that I had my husband grab a bag of black beans yesterday, that was because in the February issue of Martha Stewart Living there was an awesome looking recipe for black beans and brown rice. I had to modify the recipe a little bit more than a bit but the results were amazing. This is what we had for lunch today (it was so much yummier than it looks!):

We topped it with avocado (from a friend), cheese, salsa, and sour cream. Next time I'm going to pick up some fresh cilantro to go with it. Black beans are so going on my list of staples to have on hand. Not only did the toddler and I love it, but the baby enjoyed it too. I'm going to have to remember this recipe the next time Vegan Sis comes for a visit (because I know she'll like it too). Here's how I made this (serves 3ish)!

Black Beans (crockpot style, throw in everything listed)
  • 1/2 lb. black beans
  • 1 onion, quartered
  • 3 or 4 garlic cloves, smashed
  • 1/4 of a (seeded) jalapeno
  • 4 cups of water
  • salt and pepper
  • Cook on high for about 4 hours, discard water, garlic & onions before serving

Yummy (not)Brown Rice:

  • 1/8 cup olive oil
  • 1/2 onion, finely chopped
  • 1/2 garlic clove, minced (I love garlic, so I used a whole clove)
  • salt and pepper
  • 1 cup Brown Rice (I only have white, so I used that instead)
  • 1 3/4 water (I used 2 cups)

Heat oil in a medium sauce pan over medium-high heat. Cook onion and garlic until the onion is soft. Add salt, pepper, and rice. Cook until rice is slightly toasted (about 3 minutes). Add water, and bring to a simmer. Reduce the heat to low, put the lid on and let simmer until the water is absorbed (recipe says 25-30 minutes but the white rice only took 20 or so). Remove from heat and let stand (still covered) for 10 minutes. Fluff with a fork and serve with beans.

Menu Review Monday

We're still going strong with the Eat From The Pantry Challenge, and while it's been fun I'm looking forward towards the end of the month when I might have to be a bit more creative with our meals. I posted my original month-long plan here, but we've had to make a few adjustments here and there. Here's what we ate this last week:

1/4: We had lefse for breakfast, leftovers for lunch, and tacos with mexican rice for dinner (as planned).

1/5: Breakfast was oatmeal and lunch was peanut butter tortillas with carrots. I made "BBQ" chicken in the crockpot (bone-in breasts with bbq sauce poured in), salad, and cheesy garlic mashed potatoes.

1/6: We made blueberry muffins and cereal for breakfast, then had sandwiches for lunch (pb for toddler, tuna for husband and I). Dinner was a beef stew (made from cheap steaks and the veggies I had on hand) and some homemade bread.

1/7: Breakfast was cereal and lunch was chili (from a can). We had Spaghetti with meat sauce, salad, and the leftover bread.

1/8: Breakfast was eggs and toast then for lunch we had baked potatoes. I had a long day of teething baby and toddler tantrums/potty training so after the husband got off work we took a drive and grabbed some fast food. It was a menu plan fail, but the break was wonderful!

1/9: Waffles for breakfast, mac and cheese from a box for lunch. We took my mom out for dinner to celebrate her birthday (Famous Dave's- yumm!).

1/10: Cereal/oatmeal for breakfast and tuna sandwiches for lunch. We decided to invite some people over for dinner (the husband had to run out for more of the same cut of steak and picked me up a bag of black beans- $6). We had steak (marinated in a garlic/balsamic/Cabernet sauce) and grilled with Hashbrown Casserole and a salad (brought by the friends). It turned out to be a pretty good dinner.

Menu Review Monday

Since we're eating from the pantry this month, and I've already planned out most of our meals for the month- I figured I use my Mondays to review how we're doing. We stocked up before hand on milk, bread, a bag of salad, and a few 2liters of coke (at $1.17 for 4 bottles, otherwise the temptation to buy soda might've been too much for the husband). While we may only be 4 days into January, we've actually been eating from our pantry since about the 27th and it's been going well. We were able to throw together some neat appetizers and have guests over for New Years Eve. Here's the recap of what we've been eating:
  1. Hamburger meat w/tomato sauce and corn, served with tortillas (a childhood favorite of mine, the toddler ate 2 servings). The husband went to a friend's for football (taking a bag of chips, jar of peanuts, and homemade brownie bites).
  2. We went out for dinner with the husband's mom, sister, and uncle. I made and brought over a loaf of Garlic-Herb Braid Bread, that turned out pretty good.
  3. Turkey, Rice, and cheese veggie casserole (I bumped the Tortellini in favor of this, because the Turkey was already in the fridge and the tortellini is frozen anyways). Husband took half the leftovers for lunch and the toddler and I will be eating the other half for lunch as well.
  4. Today! We're doing tacos with mexican rice. You just sub in a bit of tomato sauce for the water and we add a bit of spice (and maybe some tomato or onion if we're feeling fancy).

It really has been great so far! It certainly doesn't feel like we're trying to scrap together meals from whatever we can find, although I was shocked at how low I was on flour. I think that this challenge is really going to help me discover where the holes are in my stockpile. I'm tempted to amend my rules of shopping to include freebies/items with overage but only those which occur when I'm planning to shop anyways. I haven't made up my mind yet.

Eat From the Pantry Challenge!

I am super excited about what these two ladies are hosting for the month of January- instead of Baking Day, we're all taking on an eat from the pantry challenge! This is the first time I'll be trying to make a month out of it, but after taking stock of my inventory- I'm confident I can do this! The rules I have set for myself in this challenge are:
  1. I will only buy from the produce, dairy, and bread sections. Everything else must come from the freezer and pantry.
  2. I will go to the store no more than once a week (although I'm hoping to limit myself to 2-3 trips total)
  3. All money saved will be put into savings.

I'm working on a menu plan today (for the whole month- yikes!!) and this is what we're looking at so far (in order, although I may change things as we go):

  1. Hamburger meat w/tomato sauce and corn, served with tortillas- yumm!
  2. Turkey, Rice, and cheese veggie casserole
  3. Stuffed tortellini in red sauce with ceaser salad
  4. Tacos with Mexican rice
  5. BBQ chicken, hash brown casserole, and corn
  6. Beef and Vegetable Stew w/homemade rolls
  7. My mom's birthday- we might take her out for dinner
  8. Parmesean Crusted Tilapia with penne and broccoli in alfredo
  9. Grilled Peppered Steak with Cabernet Balsamic Sauce, mashed potatoes, cooked carrots
  10. Oven roasted Chicken Breasts, Stuffing, Green Beans
  11. Spaghetti with meat sauce, Garlic Bread, Garden Salad
  12. Chicken Enchilada Casserole
  13. Pork Chops: need to google a recipe
  14. BBQ Meatballs, pasta&veggie (maybe? this is not normal food for our house, but we might try it just for variety)
  15. Fish Fillets (frozen), Mashed potatoes, Corn in butter sauce (freezer)
  16. Dinner out maybe?
  17. Crescent Roll Lasagna (husband's grandma's recipe), Garden Salad
  18. Meatloaf, Hash brown Casserole, Brussel Sprouts

Menu Plan (Tuesday?) and a Giveaway!

Even though I've been prepared for Christmas for quite some time, I'm still a little bit surprised at how quickly it's creeping up on me this year (seriously, wasn't it just Thanksgiving??). Thanks goodness I have all those freezer meals stashed away, because if it weren't for those- I don't know what I'd be making! Here's my menu plan for the week, it's really pretty uneventful.

Monday: Progresso High Fiber Minestrone soup (sound good? keep reading!)
Tuesday: Beef Stew (from the freezer)
Wednesday: Christmas Eve's Eve Dinner at MIL's house
Thursday: Prime Rib Roast (having my mom over)
Friday: Christmas!
Saturday: Tacos and Crockpot Refried Beans
Sunday: Baked Potato soup
Progresso has recently rolled out 4 new soups (Chicken Tuscany, Creamy Tomato Basil, Hearty Vegetable & Noodles and Homestyle Minestrone), each of which contains 28% of your daily fiber intake per serving (7 grams) and have no added MSG or artificial flavors. Sounds pretty cool, right? Even better, Progresso (through MyBlogSpark) sent me a pack which included the High Fiber Minestrone, two HUGE soup mugs, and two spoons so I could try it out myself.*

The husband was a bit reluctant to try the high fiber variety because he doesn't like "healthy" canned soups (of course, I don't think he'd ever admit to that). Except that he did like this, and so did the toddler (he thinks anything with beans is good). As for me? I think it was a bit on the salty side (I usually only buy low sodium varieties of Progresso because they generally seem saltier to me, but I also don't cook with salt unless it's needed). I did enjoy trying such an easy way to incorporate fiber into our diets, but unless they introduce a high fiber/low sodium variety- I don't imagine I'll be buying it. I think that if you're looking for an easy way to get some extra fiber and already enjoy any of Progresso's 75 other flavors, you'll like this. I think my favorite part was just having a super easy dinner night as we enter this week of craziness.

menu plan monday:

I haven't really sat down to plan my menu for this week, and I'm in the middle of a laundry disaster*, so I figured I'd do a quick plan while I let my hands warm up some.

monday: Tostadas with crockpot refried beans
tuesday: Turkey Ceaser Salad
wednesday: Turkey and Rice Casserole
thrusday: Meatloaf with mashed potatoes and roasted carrots
friday:
saturday: Beef Stew
sunday: Roasted Chicken with veggies

*my laundry disaster isn't horrible horrible, but the washer didn't spin or something (it made crazy clicking sounds) so everything is really soaking wet. I'm attempting to ring it all out and then will toss it in the dryer and be done with laundry for the day unless the husband fixes it as soon as he gets home. The bad part is the washer & dryer are in an un-insulated back room so all of the water is SUPER cold.

Menu Plan Monday

It's Monday and that means time for the menu plan. Here's what we'll be eating this week:

Monday: Pot Roast with potatoes and (tons of) carrots (because the toddler is currently in-love with carrots)
Tuesday: Pizza (from Papa Johns- they're recommending ordering in advance) and a salad
Wednesday: Beef Stew (using leftover roast from Monday)
Thursday: Turkey Pot Pie Soup with biscuits
Friday: TBD*
Saturday: Meatloaf, brussel sprouts, mashed potatoes
Sunday: Albondigas

As for Friday, we don't eat meat and I've never really been into seafood but I have recently discovered that Safeway marks down their seafood by 50% so I've been watching that and experimenting. Last week I did tilapia in a lemony browned butter sauce with pistachios- and it was pretty good (tilapia- bought a few weeks ago and frozen, butter was free not butter, lemon from mil's tree, and pistachios from the summer). This week I'm just going to wait and see what I find and then look for another recipe online. Wish me luck!

Menu Planning & Baking Day

It's not Monday yet, but I finished my menu plan for the week, this is what we'll be eating:

Sunday: Stuffed Manicotti (from the freezer, we made 2 batches the last time I made this) and Cesar salad
Monday: Albondigas (my recipe for this is huge so I'll be freezing quite a bit for later)
Tuesday: Tacos and crockpot refried beans (it's also BAKING DAY!)
Wednesday: Spaghetti
Thursday: Pot Roast
Friday: something with Tilapia, I haven't settled on a recipe yet
Saturday: Beef Stew (using leftover Pot Roast, will freeze half)

Then, I had to run to the store for supplies. Fred Meyer was close to where we went for lunch today so I stopped by there and spent $12.59 on these items:

Right Now, I'm trying to finalize my plans for Baking Day (hosted on twitter and facebook by Crystal Paine of MoneySavingMom and FishMama of Life As Mom). I played along last time and it was lots of fun sharing recipes and tips with everyone on twitter- even better was the ability to just pull things out of the freezer as we needed them! Menu Plan Monday

Nothing super exciting going on over here, we still have leftovers from our Early Thanksgiving and lots of plans elsewhere (including a photoshoot with 'the cousins' that should be fun, or else just very interesting). Still, here it is:

Monday: Cheesy tortellini with red sauce, garden salad
Tuesday: Tostadas
Wednesday: was planning on BLT's but maybe we'll do pizza instead
Thursday: Thanksgiving
Friday: Either BLT's or pizza depending on what we had Wednesday
Saturday:
Sunday: Turkey Stir fry with rice

Almost everything can and will be made with food I have stockpiled, which makes things easy on me. I do have some catalinas I need to spend at Albies by tomorrow, so I better look around and see what I need!

Menu Plan Monday

Okay, here is the plan. With the exception of a few veggies and egg roll wrappers, everything is from the stockpile for the next two weeks. I'm also planning/hoping to participate in MoneySavingMom's Baking/Freezer cooking day tomorrow! I'd like to get some baked goods done (pumpkin bread & single serve freezer pies) and frozen along with some breakfast type foods (waffles & poppyseed muffins). The toddler loves waffles so I think that'll be enough to inspire him to really help (he does like cooking with me). Wish me luck in keeping the (almost) nine month old happy as well!

Monday: Spaghetti with meat sauce, Cesar salad, and garlic bread
Tuesday: Chili dogs, baked potatoes, garden salad
Wednesday: Turkey breast, garlic mashed potatoes, corn, and brussel sprouts
Thursday: Stuffed Pizza Rolls and veggies (it's a dipping themed night!)
Friday: Turkey Pot Pie soup with crescent rolls (a modified version of this)
Saturday: Turkey Lo Mien and egg rolls (to use up every last bit of turkey!)
Sunday: leftovers or breakfast (bacon, waffles, eggs)
Monday: Teriyaki Chicken, rice, and steamed veggies
Tuesday: Pulled Pork Sandwiches, roasted red potatoes (with garlic and thyme), green beans
Wednesday: Lumpia (using half the pork), a veggie stir fry, and rice
Thursday: Chicken Alfredo with salad and garlic bread, Cheese tortellini for the toddler

Menu Plan Monday

We had a busy weekend, and my menu plans managed to get all mixed up in the meantime. The current plan is one I came up with quickly last night with the foods I have on hand. here it is:

Sunday: beef stew out of the freezer
Monday: broccoli & chicken in the crock pot, served with rice
Tuesday: Stuffing casserole (using Monday's leftover chicken), salad, crescent rolls
Wednesday: Beef and broccoli stir fry
Thursday: undecided
Friday: veggie tray, creamed tuna on toast (I know it sounds weird, but it's really yummy- a perfect Friday comfort food!)
Saturday: depending on the weather, the husband might grill something or else maybe I'll do a chicken pot pie soup with rolls?

Menu Plan Monday

I did all my shopping the other day when I felt better for a few moments in case things got worse. We're all still sniffly but rapidly improving. I wrote the menu plan last week, but there have been a few adjustments to it-here it is:

Monday: Chicken Fried Rice, veggies with dip, and Lumpia (wish me luck with that one!)
Tuesday: Leftovers- chili baked potatoes, salmon, and anything else in the fridge
Wednesday: we're doing breakfast- waffles, fruit, and bacon
Thursday: Taco and vegan chimichangas (and Beatles rockband) night. We're having some friends over and this is an easy way to feed a group.
Friday: Fish, rice, and veggies?
Saturday: Teriyaki Chicken drummettes
Sunday: (I'm leaving this one blank, if the weather is better the husband might grill or we might do pizza or stew from the freezer)

I did run back to Safeway to get 3 cans of refried beans and a big bag of tortillas. I used my catalina from the kleenex deal (it's over now) to help pay, so my total was only $2.21- not bad!

This week is a little bit repetitive because we went out a few times last week (not out out, but out to dinner at other people's houses). Anyways, we ended up skipping a few meals I had planned and will be doing them this week instead.

Monday: Spaghetti with meatballs, salad, and garlic bread
Tuesday: Pulled pork sandwiches (leftovers from the freezer) with veggies
Wednesday: Meatloaf, mashed potatoes, and brussels sprouts
Thursday: Taco night (the husband complained about the combination of taco shells and flour tortillas I put out last week, so I promised him another taco night with homemade shells)
Friday: Smoked Salmon Alfredo and a salad
Saturday: BBQ- lamb for the husband, steak for the toddler and me (I haven't settled on a side dish yet. Maybe cheesy broccoli?)
Sunday: Beef, Broccoli, and Carrot Stir-Fry

I won't need to buy much besides produce, to get the menu done- I've been re-organizing the freezer and am well stocked on meats for a little bit but may need to stock up on chicken if we get a good price.
